Tom's recent project as consulting Director of Food & Beverage Outlets at Ocean Edge Resort & Golf Club, exceeded the previous year's sales by over 25%. He oversaw four full-service restaurants and three new outlet concepts while meeting new government restaurant Covid19 standards and guidelines and managing 200+ employees.
In the last 11 years, Tom has successfully launched eight unique high volume hospitality operations with average unit sales of $2.2 to $6 mm from the outset, construction and launch. Over the years, Tom has partnered with operations leaders in companies such as Legal Sea Foods, Bertucci's, Dunkin Brands, and Mitchell Fish Markets (Ruth Chris) to assess and strengthen operations, training, recruiting, retention, profit management, and the overall guest experience.
